A method for prescribing and preparing a customized dysphagia diet, comprising the steps of:
a) performing a swallowing evaluation upon a patient to determine whether the patient suffers from dysphagia;
b) selecting a quantifiable food characteristic that can be objectively measured;
c) preparing multiple foods having different values of unit measure for a quantifiable food characteristic;
d) using an apparatus for objectively measuring the quantifiable food characteristic of each of the multiple prepared foods;
e) administering to the patient each of the multiple prepared foods having different values for the quantifiable food characteristic; and
f) determining whether the patient medically tolerates each of the multiple prepared foods.
