A cover assembly for a cooking vessel including a seal member, a lid, and a food support assembly. The seal member has a clip portion with a lid receiving channel and an overflow channel. The lid has a top end and a sidewall defining an internal lid space. A lower end of the sidewall is receivable in the lid receiving channel of the seal member. The food support assembly is connected to the sidewall and is operable between a raised position wherein a food item may be supported within the internal lid space and a lowered position wherein the food item may be supported below the seal member in the cooking vessel. Initially, it was designed to eliminate hot oil from over flowing the cooking pot, and allowing safe use of commercial turkey fryers. The inventive concept includes loading the bird and removing the bird from the encapsulation cylinder without risk of injury or hot cooking oil being displaced from the cooking pot.
